Coffee Syrup

This syrup is the base of my favourite mocha whipped cream, several of my favourite cocktails, and certain ice creams. It’s also great for beefing up overly weak brewed coffee or drizzling on dessert plates.

Ingredients:

  • 1 cup strong brewed coffee
  • 2 cups white sugar
  • 1 vanilla bean

Instructions:

  • Combine all ingredients in a small pot, and whisk constantly over medium heat until the sugar has fully dissolved.
  • Reduce heat and simmer for 10 minutes, stirring occasionally.
  • Pour into a heat-proof storage container and refrigerate until needed.
